Valle d’Itria IGP Rosso
Area of production: from the winery-owned vineyards in Valle d’Itria, Locorotondo.
Grape variety: Cabernet, Merlot and Malbec.
Maturation period: mid September.
Maximum production per hectare: kg. 7.000/8.000 grapes.
Vinification and fining: fermentation in contact with the skins at controlled temperature (24-26°C) until the alcoholic fermentation has been completed (12/15 days). Ageing in small wooden casks.
Colour: purple red with intense violet reflexes.
Nose: elegant fruity scents of plum, cherry and blackberry, along with pleasant spicy notes.
Taste: vinous, well-balanced, with a good structure and docile tannins.
Serving temperature: 18-20°C.
Serving suggestions: accompanies cheese and tasty meat dishes, excellent meditation wine.
