Valle d’Itria IGP Rosè frizzante
Area of production: from the winery-owned vineyards in Valle d’Itria, Locorotondo.
Grape variety: Pinot Noir.
Maturation period: end of August and beginning of September.
Maximum production per hectare: kg. 8.000 grapes.
Vinification and fining: vinified as a white wine. A slow fermentation of the grape must at a controlled temperature of 16°C. Secondary fermentation takes place via the Charmat Method, in autoclaves.
Colour: coral Pink with touches of violet. A fine and persistent perlage.
Nose: fresh and intense with pleasant floral aromas.
Taste: soft and clean cut with a plucky liveliness and persistence.
Serving Temperature: 8-10°C.
Serving suggestions: ideal as an aperitif; with white meat or fish; pasta or light dishes.
